OUR TOWN COOKS!

At Cheese-n-Crackers Deli on W. Maple Street, the dessert of choice is chocolate chip cookies. “They're right up there with the peanut butter bars as top sellers,” said owner Peg Callihan who came up with the recipe approximately 25 years ago. “I think the reason people like them is because they're soft.” While there's no secret ingredient, Peg said following the directions is crucial. “The beating time is very important.”

CHEESE-N-CRACKER DELI CHOCOLATE CHIP COOKIES

1 lb margarine
1 1/2 cups granulated sugar
1 1/2 cups brown sugar
1 Tbsp Vanilla
4 eggs
2 tsp baking soda
1 tsp salt
4 cups flour
2 cups semi-sweet chocolate chips

Cream together margarine and sugars until light and fluffy. Add eggs one at a time, mixing after each.
Add vanilla and beat 5 minutes at high speed. Sift together flour, baking soda and salt. Add gradually to creamed mixture. Mix well. Fold in chocolate chips.

Bake cookies in preheated 350 degree oven on parchment lined pans 12-15 min or until lightly browned.
